HALF A CUP of white bean offers 18% of the daily vitamin requirements such as B,E and K and a plenty of FOLATE and IRON.
You need folate to produce DNA especially important for PREGNANT WOMEN, to prevent birth defects in the
foetus.
INGREDIENTS
Serves 2
250g bean (wash & soak for 20mins)
1 large tomato
2 large onions (one of it can be dry roasted for a good flavour)
1 tbsp ground pepper
1/2 tbsp cinnamon powder
1/2 tbsp cumin powder
1 tbsp lemon zest
3 tbsp lemon juice
A bunch of corriander/ parsley
1/2 cup coconut milk
METHOD
1. Put a heavy bottomed sauce pan on medium heat. Once hot, add the onions, salt, pepper, cinnamon and cumin powder. Stir occasionally for 3 minutes, until soft. Keep an eye on it, bcoz u don't want the onions and spices to catch.
2. Then add the soaked beans and 200 ml of water.
3. Bring it up to a boil and then simmer it for 10 minutes. Cook until the bean softens.
DRESSING
In a bowl, mix the coconut milk, mashed tomato, lemon zest, lemon juice, corriander leaves and a 1/4 tbsp of salt
SERVE
Add the stew to ur bowl and top it with a spoonful of our dressing.
Serve hot🍜🍲
(Since tomatoes are considered as FRUITS it's better to have it without cooking)
