INGREDIENTS
• 1 beetroot
• 5 cloves of garlic
• 1/4 cup walnuts/ almonds / pine nuts
• 1/2 cup fresh coconut
• 1 teaspoon of salt
• 2 tbsp freshly ground black pepper
• vegan pasta ( I've used Zucchini )
METHOD
1. Peel the beetroot and cut into pieces
2. Blanch it in a boiling water for 2 minutes.(Use the exact quantity of water u need for the consistency as u should not drain the excess water, since it has nutritional value). Let it cool.
3. Blend all the ingredients in ur processor for a while
Top Ur favourite pasta with this pesto.Toss it up.

Coriander/ cilantro/ parsley
